Easy Slow Cooker Orange Chicken
I love to cook and I love to cook new things all the time but there are always those days when you know you have to cook dinner but you just don’t feel like it! It happens to all of us and when that happens instead of reaching for the phone for delivery or take out you should try this simple slow cooker recipe that is very simple and quick to prepare and at the end of the day you will have a great tasting meal for you and your family that is both delicious and healthy, full of flavor! Prep time is about 15 minutes and then you’re off for dinner
Here’s what you will need for this Orange Chicken dish: Serves 2-4 ppl or double the recipe for leftovers for lettuce wraps the next day or two!
- 6 – boneless/skinless chicken thighs
- 1/2 Cup GF flour or pancake mix (or use regular all purpose flour if you have no problem with gluten)
- 1 Cup orange juice
- 2 tsp balsamic vinegar
- 2 tsp rice wine vinegar
- 1 TBS soy sauce or Bragg’s soy alternative (omit if you are allergic to soy)
- 1/3 Cup light brown sugar
- 2 tsp ground ginger
- 1 Clove minced garlic
- 1/2 Med Vidalia onion sliced
- 1/4 tsp crushed red peppers (optional for heat)
- 2 tsp kosher salt
- 1 tsp cracked black pepper
- 3 TBS ketchup
Turn slow cooker on low for 6 hours to preheat
Next, cut chicken into 1 inch pieces and lightly season with salt and pepper then toss in flour. Shake off the extra and place on a tray. Heat a large skillet or wok over medium heat and brown the dusted chicken pieces in batches. Place chicken in slow cooker.
Next mix all other ingredients in a bowl and whisk together. Pour mixture over the chicken and toss lightly. Cover and cook on low for 6 hours on low or 2 1/2 to 3 hours on high.
Stir finished chicken
To plate serve with your favorite sides. I did Ginger rice and sautéed baby bok choy and peppers. Sprinkle with some toasted sesame seeds and sliced green onions and your meal is done with little clean up! Enjoy and let me know how you liked it!
